Bien Cuit has developed regional relationships with farmers in upstate New York and southern Quebec that provide grains, produce and animal products year-round. From Dashing Star Farm and Willowbrook in Dutchess County to La Milanese and North Country Mills further north who bring us the best organic and transitional heirloom grains, we have farmers who do the crucial work of getting us the right ingredients. Whether is it garnishing a vegetable tartine in the prep kitchen or fermenting our signature miche in our fermentation chamber, the products we create are possible because of the unparalleled ingredients that our friends upstate provide us with. Each vegetable, grain, animal and fruit has been grown and raised by our farmers using precise and refined methods from developing specially blended feeds for livestock to rotating and breeding crops in a way that maximizes land use and focuses on taste. From start to finish, the journey our food takes to get to the customer is one of both precision and intentionality.
